I’m almost positive that every time I make a salad I say the same thing “This is the best salad ever!” Today will be no different. Seriously, this is the best salad ever! It was so good that after I took some photos I fixed myself a huge bowl. The avocado cup was strictly for show. The avocado cup idea might work really well for parties and such. All I did was carefully cut the avocado in half, scoop out the avocado goodness, clean the shell really good and let it dry while I prepared the salad and dressing. Pretty nifty, eh? I’m not sure if this has ever been done before. If it has, please don’t burst my bubble and tell me. I’m feeling mighty proud of myself right now. I’m usually not so creative.
Anyway, the salad consists of green leaf lettuce, grape tomatoes, avocado, yellow onion and black beans. Then I drizzled some homemade dressing on top.
Cilantro Lime Dressing
- 1/2 cup fresh squeezed lime juice
- a handful of fresh cilantro
- 1/4 of an avocado
- about 1 tablespoon of agave nectar (if the dressing isn’t sweet enough add a bit more)
- sea salt
- freshly cracked black pepper
- a few dashes of chile powder
The dressing is totally what made the salad. It was amazing. So creamy too. It probably would have tasted better with a half of an avocado, but I was being a little greedy with it since all I had was one avocado on hand. And I like a lot of avocado chunks in my salad. I also think that some tortilla strips would have made the salad 100 times better, but I was trying to keep the salad more on the healthy side. Maybe next time.
I love the photos…the avocado cup is cute! :) I do agree that it would be good for parties. I may have to try that dressing sometimes…sounds yummy!
