Chicken club sandwich

Juan is always telling me that I have ‘fancy’ taste buds. Now while I do enjoy some of the finer vegan foods this world has to offer, I’m really just a simple girl. And a huge sandwich lover. What’s not to love about a sandwich? Most times I have enough ingredients laying around and can whip up a sandwich just like that. So long as I have some Veganaise and some bread I’m good to go.

Then there are the times that I take something like a simple sandwich and make it so yummy that even non-vegans stare and drool as I take that first bite. Take this sandwich for example. Last night as I was eating some of the Gardein Crispy Tenders, Juan agreed that it was delicious and said it would make a great sandwich. He said some bacon and cheese with mustard on an onion roll would probably be amazing. It got me thinking. Today the guys had plans to eat Chinese food so I figured I’d take it easy and make myself a sandwich. That photo up there is the result.

I would like to introduce you to the chicken club sandwich with Gardein Crispy Tenders, LightLife Smart Bacon, green leaf lettuce, tomato and mustard on a toasted onion roll. And yes, it was as good as it looks.
