Match Meat Ground Chicken Salad

One of the first things I thought of when I first saw Match Meats Ground Chicken was chicken salad. Chicken salad is one of my favorite foods so it’s really no surprise. I just knew that Match Meats Ground Chicken would make an awesome chicken salad. And boy was I right. Here is my super special and awesomely delicious chicken salad recipe.   1. First cook the Match Meat Ground Chicken according to the directions on the package. I placed mine on a cookie sheet, drizzled some olive oil on top and bottom, then sprinkled some poultry seasoning, freshly cracked black pepper and sea salt on both sides. Then I baked it for about 15-20 minutes at 350°.
  2. While the chicken is in the oven, place the cranberries in a bowl of hot water to soften them up a bit.
  3. Once the chicken is done, remove from the oven. Using a fork break the chicken apart. It flakes quite nicely. Try to leave some larger chunks in there though. Set aside to cool for a bit.
  4. Once the chicken has cooled, strain the water from the cranberries and squeeze out any excess water. Then mix the chicken and cranberries with the rest of the ingredients. I added the lettuce directly on top of my flat bread and placed the chicken salad on top. Then I rolled it up like a burrito and cut it in half lengthwise.

I’d also like to respond to a few comments here. Quite a few people seem put off by the price and portion size. I have a rather large family. One package of Match Meat really is more than enough for everyone. Even after everyone has had seconds I still end up with leftovers. One package really does go a long way. As for the price, well, to be honest it’s no different than purchasing a package of meat at the super market. In fact I find the Match Meats to be cheaper. Plus it can stay frozen for quite some time. And if you take it out to defrost and then decide you no longer want to cook it, you can freeze it again. Then there’s the taste factor. I mean you really can’t put a price on that. It’s well worth it. Trust me on this one.

Also, Susan from Match Meats left me a comment here letting me know that the meats can in fact be grilled. I’m really looking forward to this summer. My grill is going to be getting lots of action.

It’s been so long since I’ve had decent chicken salad, that sounds delicious! How do you do it so the wraps don’t crack? I’ve always had issues with rolling any type of bread because they seem to dry out so quickly and crack which makes the filling fall right out.

 

I love chicken salads because they are good protein intake and very healthy. Yours looks very good. I specially like the cranberries part

@Sarah: Sarah, I used Flatout bread. I remember you talking about it a while back. So when I saw it at the market (it wasn’t available back in Jersey) and saw that it was vegan, I figured I’d give it a try. It was so soft. Very easy to work with.

Usually when I work with tortillas I have to heat them up before wrapping. Otherwise they will break. Try that out.
