One of my favorite things to eat during fall is pumpkin pie. Who can resist the smell of a freshly baked pumpkin pie? Not me! The recipe I mainly use comes from The Joy Of Vegan Baking. The pecan pie crust is what makes this pie. It’s absolutely delicious!
The only problem I have while making this pie is the filling that’s left over. That probably shouldn’t happen. I guess my pie plate is too small? Usually I use the left overs to make mini pies for Mil, but she’s still away visiting family. Then I remembered reading something on Lindsay’s blog; Happy Herbivore. Here is the blog entry that inspired me to turn my left over pie filling into little pumpkin pie cups. I figure it would be a fun way to get Ethan to eat some pumpkin.
All I did was layer the bottom of the glass cup with some crumbled pie crust, layer some of the filing on top, then sprinkle another layer of crumbled pie crust and filling and topped it off with some more crumbled pie crust and a pecan. Then I popped them in the oven with the larger pie. Once they finished baking I allowed them to cool and then placed them in the fridge to chill. I think it’s going to taste awesome topped off with a scoop of soy vanilla ice cream.
