Today while sitting in the waiting room to see Ethan’s doctor, Juan spotted a cool recipe in one of the parenting magazines. It was for these sweet potato biscuits. They looked SO good. I really don’t care for how my biscuits turn out so I was excited to try out a new recipe. Lord knows I need the practice.
The original recipe called for buttermilk so I used soy milk instead. It also called for canned sweet potato. I went with an actual baked (then mashed) sweet potato. And instead of cutting them out I just used an ice cream scoop and dropped those bad boys on the cookie sheet. The more I fuss with biscuits the crappier they turn out. The last thing I wanted to do was ruin them.
The ones in the magazine looked WAY better than mine. However, taste wise they were great. I think they could have been a little sweeter and perhaps a little fluffier, but it’s possible that I’m just being too picky. I might try looking for another recipe online to see if I can come up with some better results. This biscuit would make an excellent addition to my Thanksgiving dinner.
