Last night we were watching something on the Food Network. I only caught the last few minutes of the show, but from what I saw it was pretty interesting. They were showing the different diners on route 66. One diner actually served an alligator burger. Do you believe that? The face the guy made when he first bit into it was priceless. He tried to play it off and said it was delicious, but he had to be lying. He looked like he wanted to spit it out immediately. Lol. Anyway, the last diner they showed looked the best to me. The owner/chef made something called deep fried cheesecake. As I was watching him make it my mouth was watering. It looked so good. It was so simple to veganize. The outcome was amazing. Everyone thought so. Even Juan’s non vegan cousins. One of them even offered me money to make him more. I told him I would, but for free of course. The only thing I’d like to change is the cream cheese filling. I need to somehow thicken it a bit more. It was a little too gooey. The cream cheese filling the guy on TV used looked more fluffy. Almost as if it was whipped or something. I’ll have to mess around with it more.
Please note: this is not my recipe. I just went by what I saw on TV. I just want to share with you what I saw.
Ingredients
- 10 10” flour tortillas
- 2 containers of Tofutti Cream Cheese (the non-hydrogenated kind)
- 2 cups of confectioners’ sugar
- cinnamon
- sugar
- strawberries
- vegetable oil for frying
Directions
1) In a mixer, combine the Tofutti cream cheese and confectioners’ sugar and mix until creamy.
2) Drop a few spoonfuls of the cream cheese mixture onto the center of the tortilla. Don’t put too much or it will leak.
3) Wrap the tortilla the same as you would a burrito.
4) Stick a toothpick through the back making sure the ‘burrito’ won’t come undone while cooking.
5) Place in a pot of heated vegetable oil (heat on low) and cook until golden brown on both sides.
6) Place cheesecakes on a plate lined with paper towel and quickly coat with cinnamon and sugar. You should do this while the cheesecakes are still hot so that the cinnamon and sugar stick to the cheesecakes better.
7) Cut in half and top with fresh strawberries and more confectioners’ sugar if desired.
This is probably one of the most unhealthy vegan desserts around, but it’s just too good to pass up. What’s a few extra miles on the treadmill? Nothing! Now eat up!
